Ok - here's this week's update:
NO3 before water change = 50ppm
NO3 after 30% water change = 25ppm
I'm not taking these reading too seriously anymore - since the test only measures:
0, 12.5, 25, 50 or 100ppm, there is a fair amount of room for variation within the colour bands!
Here are some pictures for you all (hope they're not getting tooooo booooring yet)!

Ok - things are moving along nicely... the Hornwort (thanks again Sanctax) is exploding and combining with the Cabomba to make a huge floaty green blob! I may have to start pruning soon - but I haven't the faintest idea where I would start!

Sayyy, I guess your cabomba's outdone the E.Densa. I hate 'blobs', horrible to sort out.

I think the Cambomba / Hornwort is beautiful. I don't have enough of it - hint hint - does anyone have a bit they're willing to give away / sell

UPDATE!
Sorry I was away so long...
Anyway, in the mean time, the plants decided that they really like being covered in diatoms (grrr...) and the green blob went blue on me (probably due to the reduced water flow through the mass of plants?) - so it got "executed".
Yesterday I fished out a load of gunky brown plants.
Good news! I finally allowed myself to buy a nice BIG lump of bogwood (€17.50 = ca. 20 Quid). It was too big to soak in a bucket, so I just gave it a good shower until the water was not coming off looking like tea...
Here's some photos... some of them are pretty murky as the water hadn't settled yet.
(I hope I still remember how this works...)
